A good chef's knife and a cast iron skillet. Together they cover most of what happens in a home kitchen, and both last decades. Add a Dutch oven and a stand mixer as your cooking grows into them.
- Is expensive cookware actually worth it?
Sometimes. A great knife is worth paying for because you feel it every day. With cast iron and enameled Dutch ovens, the cheaper pick often cooks just as well — you pay extra for weight, looks, and warranty, not better food. We say which is which on each page.
- Do I need a matching knife set?
No. A chef's knife, a paring knife, and a serrated bread knife handle nearly everything. Block sets pad the count with knives you'll rarely touch.
